Fatty Acids

• Triglycerides are composed of one glycerol unit and three fatty acids.

• Fatty acids differ in two ways:

  • chain length
  • saturation
    • saturated
    • monounsaturated
    • polyunsaturated
    The more saturated the harder at room temperature.
